Gayo honey coffee comes from the cool highlands of Aceh, Sumatra, and is processed with the traditional wet-hulling method, or “giling basah.”
Despite the name, this coffee doesn’t use real honey. The word “honey” refers to the sticky, sugary mucilage that stays on the beans during drying:
After harvesting, the coffee cherries are de-pulped – the outer skin is removed.
A layer of mucilage (sweet, sticky fruit coating) is intentionally left on the beans.
The beans are then sun-dried on raised beds or patios, allowing the natural sugars to soak into the bean.
During drying, the beans develop a honey-like texture and sweetness, which is why it’s called honey coffee.
Depending on how much mucilage is left on the beans, producers may refer to yellow honey, red honey, or black honey, each offering a different level of sweetness, body and intensity in the cup.
This careful process is what makes Gayo honey coffee from Aceh stand out among Indonesia’s specialty coffees.
